“Jimmy’s Room” Bourbon Whiskey
By law, Bourbon Whiskey needs to have a minimum of 51% corn in the recipe. Which means we get to play with the other 49% in any way we would like. And we do!!!
Our “Jimmy’s Room” Bourbon Whiskey is an exploration of flavors, using locally sourced corn and then a variety of complimentary grains including wheat, rye, oats, and unique malts!
We also use a variety of cask sizes and char levels, sourcing our barrels from The Barrel Mill in Avon, MN. We use barrels as small as 5-gallons to test out new ideas, as well as 15-gallon, 30-gallon, and a handful of standard 53-gallon casks.
Depending upon the particular grain recipe and the cask size, some of the whiskies need only a year to mature, while others will sit in the casks for, well, we will let you know when we do!
Although we do vary with barrel-proof as well, most of our spirit enters the cask at around 55% alcohol content, meaning we do not need to dilute it as much when taking it to bottling strength.
Bottom line is that whiskey is meant to be explored, and we love to travel the variety of paths to make great whiskey. And thanks to our good friend Jimmy for letting us tell your story!
