Rye Whiskey – the spice of life!!!

Just like we do with the bourbon and most of our other whiskies, we love to explore the flavor that each grain brings to the whiskey! Rye can often be considered the black-sheep of grains as it tends to be finicky and needs a little more attention than its counterparts. When we mash our rye, we need to use a few tricks of the trade to keep it in line, but trust us it is worth the extra effort!

Some of our rye recipes are 100% rye – including the malt. Others are as low as 55% rye and may use corn, wheat, oats, or a combination of those to complement the intense flavor the rye provides.

But in all cases, we select only the narrowest cut of the hearts and let that spirit rest in a variety of new charred oak casks.
